This partnership introduces a groundbreaking digital twin system — an advanced virtual model of EzyChef’s production line that uses artificial intelligence to enhance food safety, consistency, and manufacturing efficiency across all texture-modified food products.
Designed specifically for EzyChef’s Health Range, this innovation ensures that meals like purees and soups meet the highest standards of safety for people living with dysphagia or swallowing difficulties. By combining AI technology and real-time data, EzyChef is redefining what it means to produce safe, high-quality food for healthcare and aged-care sectors.
Driving Innovation in Food Safety and Quality
The digital twin system creates a dynamic, real-time simulation of EzyChef’s production process.
This allows the team to monitor, predict, and optimise every step — ensuring that each batch meets strict quality standards.
By leveraging artificial intelligence, EzyChef can:
- Identify potential production inconsistencies before they occur.
- Maintain optimal product texture and nutritional integrity.
- Improve manufacturing timelines and efficiency.
According to Dr Abhik Banerjee, Project Lead and Associate Director at Swinburne’s Digital Innovation Lab,
“Meeting product quality targets and ensuring product consistency is critical to manufacturing productivity, particularly within texture-modified food production. Leveraging AI to monitor and adapt processes in real time has shown tremendous potential for achieving these goals.”
Dr Banerjee adds that the collaboration’s ultimate purpose goes beyond technology:
“Food is deeply connected to warmth and care. EzyChef’s products make a tangible difference by helping vulnerable individuals enjoy nourishing and comforting meals.”
A Partnership Built on Research and Purpose
This initiative forms part of the Australian Research Council (ARC) Research Hub for Future Digital Manufacturing, a $5 million programme launching in March 2025.
Professor Dimitrios Georgakopoulos, Director of the ARC Hub, notes that this collaboration showcases the university’s dedication to digital transformation within Australian manufacturing.
He explains,
“Our partnership with EzyChef demonstrates how AI and digital twin technologies can create sustainable, data-driven manufacturing solutions that enhance productivity and competitiveness.”
This long-term collaboration will run for five years, with the shared goal of developing innovative systems that ensure Australian-made food products remain safe, sustainable, and world-class.
Building on Proven Results at EzyChef
The EzyChef–Swinburne partnership builds upon successful previous research from 2023, where an Industrial Internet of Things (IIoT) solution was implemented at EzyChef’s Broadmeadows facility.
That system allowed real-time monitoring and data capture, improving both transparency and production performance.
